I know there is no such thing as a quick and easy mod.
Here is a list of some that require (it seems to me) limited input for maximum return.
None of the following are complete builds/rebuilds, but all require a bit of work graphically, or FM/DM wise.
1. From the Ju 88 A-4 , the Ju 88 A-5
The A-4, intended to be added to the roster first, was delayed by the lack of upgraded engines (1,340 hp Jumo 211J), so the improved airframe was completed with the older and less powerful Jumo 211 G-1 (1,200 hp). Externally, the only difference between the A4 and the A5, was that the latter(A5) had 2 ETC 250kg hardpoints outboard of the enginges and dive brakes.
I propose the A5 (early) with only 3 x defensive MG 17, nose, dorsal and ventral with the rear canopy flat panelled.

and the A5 (late) with 1 x fixed MG 131 forward firing, 1 x MG 18 trainable forward firing, 1 x MG 81z (twin) trainable ventral, and 2 x MG 18 dorsal in bulged rear canopies.

similar bombload to the A4 but with somewhat reduced performance due to the less powerful engines.
2. From Ranwers Wellington B Mk III the Wellington B Mk IC, and GR Mk VIII
Wellington B Mk IC
The B Mk IC at 2,685 built, was numerically the second most important Wellington
variant (after the B MK X).
2 x Bristol Pegasus XVIII generating 1,050 hp each at 2600 rpm would lead the
Mk IC to inferior performance to Ranwers' B Mk III ( 2 x Bristol Hercules XI at
1,500 hp each). In addition, the rear turret is downgraded from a FrazerNash FN20
4 x .303 turret to a 2 x .303 FN10 Turret.

The Mk VIII was the first Wellington specifically built for Coastal Command Use (though there was a minor production of B MK VIIIs - 65 built)
Based on the Mk IC (and therefore for SAS purposes the Mk III will be a perfect match in terms of basic structure) the GR Mk VIII was powered by 2 x Bristol Hercules XI generating 1,500 hp each.
271 of the GR MK VIII (early) were built, featuring ASV MK II "Stickleback" radar masts and Yagi aerials, and a loadout that included torpedos, depth charges, anti-submarine bombs,naval mines and marker flares.
58 of the GR Mk VIII were equipped with Leigh lights in a retractable bin in place of the ventral turret, and the nose MGs were deleted, as the light was aimed from the nose gunner's (former) position.
3. Fairey Swordfish Mk II. Entered service in 1943. 1,080 built making it the most
numerous Swordfish variant.
Externally the same as the Mk I, the Swordfish Mk II had its
lower wing surfaces reinforced with sheet metal to permit the carrying of
8 x 3" rocket projectiles with 60lb HE or 25lb Armour Piercing warheads,
depth charges and anti-submarine bombs, as well as the Mk I's bomb, torpedo and
marker flare loadout.
In order to counter the added structural weight, the powerplant was increased to
a Bristol Pegasus XXX 750 hp radial engine ( 60 hp more than the Mk I), thereby
slightly improving overall performance.

4. From the He-111 H-6, the He111H-3
Using the same structure as the H-6, the H-3 was an early He111 variant that was
outfitted with a firepower option for maritime anti-shipping duties.
Powered by 2 x Jumo 211 D-2 Engines generating 1,200 hp, the H-3
was armed with a bombload of up to 4,410 lbs ( 2000 kg).
Max Speed 252 mph/405 kmph range 1,280 miles
The H-3 was equipped with a 20mm FF cannon firing from the
canopy nose.
Defensive armament consisted of fixed forward nose 7.92mm MG, a ventral manually
aimed 13mm MG, a manunually aimed dorsal MG, and manually aimed beam MGs.
5. FW 189 Uhu mods
FW189 A-1 Nacht Jaeger
Same structure as the in game Uhu. Same flight model should suffice.
For the A-1 Nacht Jaeger, delete the mid upper defensive Mg, and replace with a
single barrel MG 151/20 Schrage Musik installation.

About 30 x A-1s were modified to this variant in 1944, mostly to attack Soviet night
bombers, though some were assigned to Norway.
FW 189 A-4 Uhu Schlacht
Replace the wing root 7.92 Mgs with MG 151/20s or MGFFs.
Possibly loads of 4 x 23 bomb containers of 2kg Butterfly Bombs or
50 kg bombs.
Under fuselage, engine nacelles and fuel tanks were given light armoured
protection, likely at the cost of some performance.
6. Cantz1007bis (early) Single Tail Plane
Almost half of the Cantz1007s were built with a single tail fin.
This would require a modified FM and DM.
Other equipment was the same.
7. Mosquito NF XIII
The Mid-late war version of the Mossie NF Mk II, the NF Mk XIII(early '44) can also
represent the field mod variant NF MK XII (available in Feb '43).
The NF Mk XII and XIII carried the "Bull" nose centrimetric Mk 8 radar, and therefore
dispensed with the 4 x .303 nose mounted MGs. The NF Mk XIII was powered by the
Rolls Royce Merlin 23, which generated 1,390 hp at 3000 rpm, and 1,430 hp at
3000 rpm at +16 lbs boost at 11,000 ft.
8. Fieseler Fi156 C-5 Storch
This Stork was equipped with either a 103L drop tank or a camera for battlefield
reconnaissance. The DT gave the Storch a range of 630 miles/1010 km (from its
basic 240 miles/385 km).
