in what kind of UP?
 i just disabled my DBW 1.71 mods, then enabled UP3
in the selector i chose UP3 (RC4 - because i am a DBW fanboy)
loaded the mission as you wrote it earlier, and shot myself off the cat without a hitch.
tried again with a bombload (2x500 + 6x250 lbs) and no go - in the ditch

engine on
release chocks
taxy to catapult
engage chocks
slowly spool up engine (ignore overheat message)
release chocks

happy...

Just to check, are you using the Carrier Takeoff Mod or the AI, Engines, Hotkeys and Carriers Mod?
(I'll try with both, but if  it doesn't work with one I'll let you know)
