Me 323 D-1 Bedienvorschrift
 reading procedures, you can find the words in German,maybe  :)

Looks like theres a big elevator trim wheel below the throttles by where your 'hand brake' looking thing is in the b&w photo above your last pic Ranwers...

Mayybe there's some additional info over at WW2aircraft.net ??
