The text below "Bogen? Kurtz Drehen" SEEMS to be something like "Radbremsscheiben" but I wouldn't bet anything on this interpretation being correct.
"Kurtz" would be "Kurz" by the way.

1) The Handle that is shaped like a "T" in the center of the column

"Kurz"
can that also be "Links"?

instead of
"turn the lever shortly"
i think it could be
"turn the lever to the left"

The arrows show this is possible. the Handle is in teh Resting position now.
When activated, you take the handle and turn it 90° against the clock. (to the left)

============================

below "kurz"
a word that looks like "Räder"..."maschine"

right side of "hier"
"öffnen"
--> Open here.
page 13 confirms:
this is the braking system to block the wheels

======================
Page 15.
The Text behind the big lever knob, just below "hier"
"Seitenruderentlastung"
======================

On second thought it looks more like "Bogen links drehen", the centre word seems too long to be "kurz".
Below that the text seems to be more like "Räderxxxxxxxxxxx" or "Ruderxxxxxxxxxxxx", my guess it is something to do with the rudder, perhaps trim tab adjustment?

Where you read "Rädermaschine" I would read something starting with "Propeller...", but I couldn't guess the rest

My guess is "Rudermaschine" and definitely not "Räderxxxxxxxx" as there is no Umlaut above the second letter. Possibly an electric motor to adjust the trim tab on the rudder?
