indeed, a huge (or much bigger, at least) plate would do the trick.
how easy that is, i'm not sure.
it might be simple to do, then again it might not....
my plate knowledge is lacking..... :D

Just tried :
so-called swamp plates are easily done from suitable airfield plates, by replacing their *.tga files by swamp ones, of the same size and name, and by appropriately adjusting static.ini entries. The swamp plates may be surrounded by the same swamp textures, the only small drawback is that the repetitive effect might spoil the look a bit. It should be worked out further.
The creating of larger swamp plates would be still appreciated.

Report on progress:
created working swamp plates, each of the size of about 350 x 350 meters, see pictures:

so, what happens now when a plane crashes? does it have the same effect of landing in the sea?
does the plane sink from view completely, as i suspect....?

Yes, the plane disappears completely, as there is the sea or lake under the swamp plate. Nobody can digg out neither the plane nor the pilot's body. Swamp is bottomless.  ;)

What about Vietnam or other areas with swamps? Adding self generated trees creating rivers and streams?

The solution is a plate, it is flat object, not a texture. It was tried to cover the rivers, with sides of the swamp masked under wood added in  unlocked Il2 :

yes, it can, just replace the swamp *tga file by sand-looking one and place it over the river or lake. This sand will be bottomless.

The object will be a part of coming Estonia map, expected release date sometime in April [this year], I hope, +2 weeks, of course...   ;)

Interesting, specially If a muddy river can be painted on that plate.
