Hitting a specific button causes a hand to animate the gesture...

A modder would need to make a arm/hand animation and then a keystroke to command it...

I'd map it to ctrl+F+U

Priceless  :D :P  ???  ;)

Thought something similar though not primarily aircraft crews but rather ground crews. Using Hooks moving Heads, Arms etc. is not a big deal, however we need models with separate limbs with proper origin points of the to be attached meshes. As soon they are there we can animate people. ;)

Giving the finger, or equivalent hand gesture, goes back to the dawn of creation.

Of course, the raised middle finger isn't a universal insult. In some cultures, a raised thumb and little finger and the other fingers clenched, or all fingers clenched but the index and middle finger wrapped around the thumb are the equivalents.

More practically, you'd want pilot figures and figures of people on the ground to be able to point, and to wave with one or both hands.
