I watched that video a few days ago, along with his "Why the 109 was slower than the P-51" video.

I think he briefly touched on it but, off the top of my head, doesn't the 109 get, relatively speaking, faster at lower altitudes?  The same 109G2/G4/G6 that will be left in the Mustang dust at 30,000 feet is actually faster down on the deck, right?

Whenever I've flown the Mustang against the K-4 the rate of climb is different....You can certainly see and feel it when you fly the K-4 as well as the theoretical K-14 as well. The Mustang still has it for manueverability though at high speed, the 109K I've always found is that it's manueverability is SEVERELY hampered when in a turn/dive fight and I always end up shooting down the K-4 in the process as he's frozen by the speed he's attained.
